Coconut Cake.


Coconut Cake.

This is the first time that I baked coconut cake as I normally bake coconut macaroons and instead of doing them I decided to do a cake which by the way came out so soft and delicious that I have decided to bake some more :))

Ingredients...

1 Coconut Grated Or Juiced
2  1/2 Cups of flour
2 1/2 Cups of Coconut Milk
1/2 Cup of Sugar
1/2 TBS Spice
1/2 Cup Butter Cut in half

Method...

In a bowl combine grated coconut , spice, coconut milk, sugar and mix until all ingredients are well blended and sugar has disolved.

Pour in coconut milk, I normally juiced my coconut as to get the fresh milk from it to use , and I find that the coconut milk really make the cake taste delicious :)

When all iingredients have been mixed well add flour gradually to get the right consistency, don't make it to tight as the flour usage is just a mete means to hold the coconut while it bakes so that it wouldn't fall apart when finished.

So gradually add flour and mix well add more coconut milk if you have to as the milk will make the mixture set to the right consistency and you can do a test with a spoon etc , just take up some of the mixture and let it fall off the spoon, you don't want it to watery just right with a drip but also a sturdy lift that holds onto the spoon.

So when you have achieved that you're mixture is ready to be paned to bake, so now you're going to prepare a baking dish, you should still have some of the butter left over so just take off a piece and base your baking dish, making sure that all space is covered with butter.

Sprinkle some flour in the dish and while holding the dish shake it around until all the flour has been distributed all over the butter in the dish, shake out any remaining and throw away.

Now you are ready for the mixture, I like to base my baking dish with butter and flour as to stop cakes etc from burning .

So in the prepared dish pour all the mixture and let it settle, and bake for about 10-15 mminutes on medium heat.

The coconut cakes bakes very fast so keep check on it and test the middle with a toothpick to make sure that the inside is baked, you can let it baked until golden brown that's when it's finished.

Let cake cool and topple onto a serving dish, cut to preferred slices and served with fruit  whip cream. Enjoy!  :)
